Ingredients (Makes 1 huge serving)

  • 2 eggs
  • 5 T plain nonfat greek yogurt
  • 2 T coconut flour
  • 1/2 tsp baking powder
  • 1 1/2 tsp sugar
  • 1 T cocoa powder

Instructions

Whisk all ingredients in a microwave safe bowl.

Microwave for 3-5 minutes, depending on your microwave. (Mine took 4 minutes exactly.)

Turn out onto a plate and top with your favorite toppings, or enjoy as it is.
